Are you looking for a healthy meal that not only looks like it came straight out of a restaurant but is also finished in under five minutes? Then I have the perfect recipe for you. This beetroot carpaccio is the perfect summer meal when you are short in time but still want to nourish yourself.

Ingredients:

  • 3-4 beetroots (vacuumized)
  • One handful of arugulas
  • 50g goat cheese (or Feta)
  • 20g walnuts

For the Dressing:

  • 2 tbsp native Olive oil
  • 1 tbsp White wine vinegar
  • 1 tsp honey
  • 1 tsp mustard
  • Salt and Pepper

Steps:

  1. Put all the ingredients for the dressing in a small mug and mix it. Season with salt and pepper.
  2. Grate the beetroots into paper-thin slices with a vegetable slicer, wash the arugula and chop the walnuts.
  3. For plating, arrange the sliced beetroot in a circular pattern. Distribute the arugula on top and drizzle with the dressing. Crumble the goat cheese over each portion, sprinkle the roasted walnuts on top.
  4. Finally, enjoy your colorful, healthy and light weighted summer meal!
