While being in Kiel, I was craving some home comforts and decided to make an Irish takeaway delicacy ‘The Spice Bag’. A spice bag is an Irish take on a Chinese takeaway, which consists of shredded chicken and chips doused with spices.

To make a spice bag you will need :

  • 1/2 cup milk (any kind works)
  • 2 tbsp hot sauce
  • 2 tsp salt
  • 1 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1 1/2 tsp chilli powder
  • 1/2 tsp cayenne
  • 1 tsp ground pepper
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • oil (any kind works)
  • 1 red pepper
  • 1 small onion
  • crisps
  • 6 boneless chicken thighs

To start, cut your chicken into small bite-size pieces. In a medium bowl stir the milk and hot sauce together and add the chicken. Let the chicken marinate for at least 20 minutes or overnight for maximum flavour.

Mix all the spices together in a small bowl and start cooking your chips.

Prepare the flour dip by combining the flour, baking powder and 1 1/2 tsp of the spice mix. Once the chicken is done marinating, dip each piece individually into the flour mix, back into the marinade and then back into the flour mix. Fry the breaded chicken in the oil until golden brown.

While the chicken is frying, cut up your pepper and onion and fry in a large frying pan until lightly brown and softened. Add your cooked chicken, chips and the remainder of the spices and mix.

Your Spice Bag is now ready to serve!
