Today I’m going to share again another delicious recipe which is super simple and easy. It’s a one pot dish and within 30 to 40 minutes it will be done. As Lentils are good source of protein for many vegan and vegetarian people this dish will also appeal to some other students who eat non vegetarian as well. And as it is a one pot recipe no need to worry much just put them in the pot and leave for your study or other works and come back to your pot again when it is ready. Now Let’s see the ingredients.
Ingredients:
- One pot
- Rice (2 cups)
- Lentils ( For this recipe I’ve used the Mountain Lentils. You can use Red Lentils too. 1 cups)
- 1 Onion (Finely chopped)
- 1 Tomato (Finely chopped)
- Salt and Pepper to taste
- Half cup of Olive Oil
- 1 tbs (Table spoon) of Oregano, Garlic Powder (My Garlic were finished. Otherwise, you can also use 1 clove of Garlic finely grated) Apple Cider Vinegar
- 1 Vegetable Stock
- Tomato Paste
- Water
Recipe:
Rinse the Mountain Lentils under the cold water. To make it cook well you can soak it for 1 hour before cooking (optional). But since this recipe is to save time you can do it max 15 minutes or not even do so. Put 2 tbs of Oilve oil in the pot and the pot should be in medium heat. Then add chopped onion and tomato inside the pot and saute them until the tomato is a soft. And the tomato paste, 1 tbs of oregano,garlic powder, apple cider vinegar to add nice umami to it. When you can get the nice fragrance of the sauce add rice, lentils in it and mix them all well. Add Salt and pepper now in it. Mix them well again and add rest of the from the cup olive oil and add 3.5 cups of water in the pot. The pot will look like this now:
Now put the lead on top of it and let it cook for 30 to 40 minutes. After 30 to 40 minutes the dish will be ready to eat. Enjoy this nice meal with some salads if you want can eat it will some meat or can eat it as it is. I personally have enjoyed it with a nice coconut milk chicken curry. Guten Appetit!
