Hello dear reads, Today I’m going to share another awesome and healthy recipe with you guys. This is super simple and it’s a heavy with protein and fibers. It would take maximum 10 to 15 minutes. (Yes it is that fast and easy!!!) It’s a perfect dish for our fellow students between two lectures who have little time to do anything but need good food and must work quickly as well. Let’s look at the ingredients.

Ingredients:

  1. ¼ cup olive oil
  2. 1 onion, finely chopped
  3. Veggies that you have ( I’ve used 1 tomato and 1 Pak Choi/Bok choy), diced
  4. 1 canned chickpeas (Kichererbsen), drained and rinsed
  5. Salt & freshly ground black pepper
  6. 2 small Bell pepper
  7. Fresh Lemon juice, half of the lemon
  8. 2tbs Coconut milk

Recipe:

Add olive oil to the pot and when it appears to be getting hot, add the onion. Add the veggies and chickpeas and saute for 1 to 2 minutes until the flavors come out. Add the bell pepper and lemon juice now and mix well for 1 minute. You should now add salt and freshly ground black pepper to taste. Mix them well again. Now it should look like this:

Once you see the veggies becoming soft, add coconut milk to soak up the flavors and make it thicker, then add a cup of water to cook for 5 minutes in medium heat. If you are a non-vegetarian, you can also add an egg. Voila! This food is ready, and you may serve it with rice or bread or eat it just as it is. So Gutten Appetit!
